Bell peppers

One cup of chopped raw red bell pepper contains over 300 percent of the recommended daily intake of vitamin C. Bell peppers contain several other antioxidants, notably vitamin A and folate. In fact, 1 cup of chopped raw red bell pepper provides almost the entire recommended daily intake of vitamin A. Vitamin A is linked to maintaining retinal function and protecting the body’s mucosal linings, which form a protective barrier against a variety of pathogens.
