Crispy Sesame Green Beans with Carrot and Red Cabbage

Green beans like most green veggies are low in calories but dense in vitamins(such as Vitamins A, C and K) and minerals (such as manganese, magnesium, calcium, potassium and iron). They are also quick and easy to make. This pretty dish is bright, colorful and flavorful.

 

MAKES: 2 Servings
PREP/COOK TIME: 15 Minutes

INGREDIENTS

  • 8 ounces green beans or haricot verts

  • 1/2 teaspoon Sesame oil

  • 1/2 teaspoon extra virgin olive oil

  • 1 tablespoons minced garlic

  • 1 teaspoon minced ginger

  • 1 tablespoon water

  • 1 tablespoon low sodium soy sauce

  • 1 teaspoon sesame seeds

  • 1/4 cup grated carrots

  • 1/4 cup red cabbage, thinly sliced

  • 2 tablespoon cilantro leaves

  • 2 tablespoons green onions, thinly sliced

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly cracked black pepper

 DIRECTIONS

  1. Heat a medium-sized pan fitted with a lid over medium-low heat. Add the sesame oil and olive oi, heat until oil is hot but not smoking.

  2. Add the garlic and ginger, saute for 30 seconds, continuously stirring until fragrant. Add the green beans and increase the heat to medium, saute for 1 minute. Add the water and soy sauce, stir to combine. Cover and allow to cook for 2 minutes.

  3. Stir and cover, cook another 1 to 2 minutes, or until the beans are crisp tender. Turn off heat. Season with salt and pepper as needed. Sprinkle beans with sesame seeds.

  4. Add the carrots, cabbage, cilantro, green onion and combine. Serve immediately.
