Foil Wrap Salmon with Avocado Oil and Italian Seasoning

Foil wrapping your fish is an easy way to prepare it that keeps it moist and flavorful. It also makes clean up a breeze. Here we used avocado oil for its light, fresh, buttery taste. Avocado oil also has a high smoke point so it is great for cooking at high heat. This dish can be made in you oven but we like to do this outside on our gas grill. Look for wild caught salmon if you can find it, specifically Wild Alaskan King salmon.

 

MAKES: 2 Servings
PREP/COOK TIME: 1 hour

INGREDIENTS

  • 2 Eight ounce salmon filets

  • 1 tablespoon avocado oil

  • 2 teaspoons dried Italian seasoning

  • 1/2 teaspoon salt

  • 1/2 teaspoon cracked black pepper

  • 6 lemon slices

 DIRECTIONS

  1. Preheat your grill to medium high (400 to 450 degrees).

  2. Place each salmon filet on a piece of aluminum foil large enough to wrap the fish. Drizzle each filet with avocado oil. Season each filet with salt, pepper and Italian seasoning.

  3. Place lemon slices on top of each filet and the tightly wrap ans seal each piece in the foil. Place the fish on the grill and cover. Cook 10 to 12 minutes or more depending on the thickness of the salmon and your desires level of doneness.

  4. Serve immediately.
