Grape, Avocado and Arugula Salad

This is a simple nutritious salad recipe that is full of vitamins, fiber and flavor! It makes a great meal with the addition of avocado and nuts for protein and healthy fats or side salad to some grilled fish.

MAKES: 4 Servings
PREP/COOK TIME: 60 Minutes

INGREDIENTS

FOR THE SALAD

  • 6 cups fresh baby arugula, loosely packed

  • 1 cup seedless grapes, any color, halved

  • 1 avocado, peeled, pitted and diced

  • 1/3 cup crumbled goat cheese

  • 1/3 cup chopped toasted walnuts or pecans

  • 1/2 small red onion, thinly sliced

    FOR THE DRESSING

  • 1/3 cup extra virgin olive oil

  • 3 Tablespoons white balsamic vinegar

  • 2 Tablespoons honey

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly-cracked black pepper

 DIRECTIONS

  1. To toast the nuts, place them in a dry frying pan on medium heat. stir the nuts often to prevent scorching. Toast until they smell fragrant and begin to brown, about 2 to 3 minutes. Cool for a few minutes.

  2. Add all the salad ingredients to a serving bowl.

  3. To make the dressing, add the vinegar, honey, salt a pepper to a small bowl and mix together. Whisk in the olive oil.

  4. Drizzle the dressing on the salad and toss to combine. Serve immediately.
