Edamame

When you are trying to avoid the potato chips and you are hungry for a snack, this is a quick, easy and healthy snack to make. They are loaded with Vitamin K, folate, magnesium, copper, phosphorus and are a great source of fiber. They are easy to find in the frozen foods section of your grocery store. Keep a few bags in your freezer for an easy snack fix.

 

MAKES: 4 Servings
PREP/COOK TIME: 10 Minutes

INGREDIENTS

  • 1 14 ounce bag of frozen edamame, whole bean

  • 1 pinch salt, preferably a kosher flake salt

 DIRECTIONS

  1. Bring a large pot of water to a boil. Add edamame and boil for 5 minutes.

  2. Drain and sprinkle with salt.

  3. Eat by scraping beans out of the pods with your teeth.
