Air-popped popcorn, plain contains only 31 calories per cup. A cup of popcorn also contains 1.2 grams of fiber and less than 1 gram of fat. While popcorn contains only small amounts of vitamins and minerals, such as magnesium, potassium, and vitamin A, it has high levels of antioxidants.  This version with white truffle olive oil and rosemary is just a bit decadent.  You will need an olive oil spray bottle.

MAKES: 8 Servings
PREP/COOK TIME: 10 minutes

  • 1/2 cup white popcorn

  • 3 tablespoons fresh rosemary, chopped fine

  • 1/4 cup white truffle olive oil

  • 1 tablespoon garlic powder

  • Sea Salt to taste

PREPARATION

  1. Fol1ow the directions for popping corn according to your popper's instruction.

  2. Mix the rosemary, garlic powder and salt together.

  3. With popcorn in a large bowl, spritz the surface of corn lightly with oil, then sprinkle with some of the rosemary mixture over the sprayed surface. Mix the corn in the bowl and repeat the process a few more times.
