Salmon Poke

Poke is a Hawaiian word for “to Slice” or “cut crosswise into pieces”. It is a dish of raw fish marinated in various sauces and served as an appetizer or main dish over rice. This one contains salmon but is commonly made using ahi tuna, yellow fin tuna or any variety of fishes. What you do need to have available from your local market is sashimi- grade fish (meaning that it is safe to eat it raw). Make sure you buy from a market you find trustworthy. If you like raw fish you will find this a real treat.

 

MAKES: 4 Servings
PREP/COOK TIME: 30 Minutes

INGREDIENTS

  • 1 pound quality sashimi-grade salmon filet, cubed

  • 1/4 cup light soy sauce (low sodium)

  • 1 Tablespoon white sugar

  • 2 Tablespoons Furikake rice seasoning (see note)

  • 1/2 teaspoon red pepper flakes (or more to taste)

  • 1 tablespoon freah grated ginger

  • 1 1/2 teaspoons fresh lime juice

  • 1/4 cup sweet onion, finely diced

  • 1/4 cup scallion, finely sliced

  • 1 Haas avocado, cubed

  • Cilantro, for garnish

 DIRECTIONS

  1. Combine all ingredients together in a bowl. Toss well to coat. Cover tightly and chill for at least an hour.

  2. Serve cold as is or over brown rice.

Notes: You can find Furikake rice seasoning in many specialty markets or order it on Amazon.
