Grape, Avocado and Arugula Salad

This is a simple nutritious salad recipe that is full of vitamins, fiber and flavor! It makes a great meal with the addition of avocado and nuts for protein and healthy fats or side salad to some grilled fish.
MAKES: 4 Servings 
PREP/COOK TIME: 60 Minutes
INGREDIENTS
FOR THE SALAD
- 6 cups fresh baby arugula, loosely packed 
- 1 cup seedless grapes, any color, halved 
- 1 avocado, peeled, pitted and diced 
- 1/3 cup crumbled goat cheese 
- 1/3 cup chopped toasted walnuts or pecans 
- 1/2 small red onion, thinly sliced - FOR THE DRESSING 
- 1/3 cup extra virgin olive oil 
- 3 Tablespoons white balsamic vinegar 
- 2 Tablespoons honey 
- 1/4 teaspoon salt 
- 1/4 teaspoon freshly-cracked black pepper 
DIRECTIONS
- To toast the nuts, place them in a dry frying pan on medium heat. stir the nuts often to prevent scorching. Toast until they smell fragrant and begin to brown, about 2 to 3 minutes. Cool for a few minutes. 
- Add all the salad ingredients to a serving bowl. 
- To make the dressing, add the vinegar, honey, salt a pepper to a small bowl and mix together. Whisk in the olive oil. 
- Drizzle the dressing on the salad and toss to combine. Serve immediately.
