Roasted Chickpea Snack
Chickpeas or garbanzo beans are legumes with amazing nutrition. They are a plant based protein that also are packed with fiber, iron, zinc, phosphorus, B vitamins and more. That you can turn something that healthy into a delicious healthy, crunchy snack just makes them that much more fantastic. Choose any spices that you would like to top them with. They also make a good salad topping!
MAKES: 6 Servings
PREP/COOK TIME:40 minutes
2 cups cooked chickpeas
2 tablespoons extra virgin olive oil
3/4 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 teaspoon cumin powder
Preheat oven to 350 degrees.
If using canned chickpeas, make sure they are rinsed and dried thoroughly. Homemade one will need to be dried. They should feel dry to the touch.
Place chickpeas in a bowl and toss with the olive oil and salt. Spread chickpeas on a rimmed baking sheet and roast for about 20 to 30 minutes. They should be beginning to brown.
Remove from oven and sprinkle with the rosemary and cumin and bake for a few more minutes until they are dry and crispy.
STORAGE: These are best eaten on day made as they will tend to get chewy over time. Although they taste addictive that way too. Store at room temperature in an airtight container.
